I believe that Cooking is not a Science, its an Art . It requires you to be creative. A little change here, a little deviation there from the recipe only adds more flavor! So don’t think you are married to the quantities or the ingredients, be bold and trust yourself!

Ingredients

  • Okra 
  • Onions
  • Tomatoes
  • Spices – Dried ginger powder, turmeric, roasted cumin powder nor chaat masala
  • Cumin for Cooking rice
  • Coriander
  • Rice
  • Lime/Lemon Juice

Cut Okra horizontally in half and then cut it once more lengthwise (see pic). Generously drizzle ghee and salt and put it in the oven at 450F for 20 minutes. Broil for another 3-4 minutes till its crisp. Add tomatoes, onions and spices, lemon juice.

Cook Rice separately. In a pan, heat some ghee and whole cumin seeds till they splutter. Add the rice, salt, coriander and lemon juice. You can add some green chillies if you like.
