Sauté onions, tomatoes, celery, garlic in olive oil in big stew pot. Throw in some soaked (overnight) cannellini beans, winter squash, kombucha, sweet potatoes, yellow squash, pumpkin, lots of parsley, dill, a little bit of thyme and rosemary and a lot of water. Boil till the beans are really soft and the water has reduced a bit.
Add salt, pepper, basil and some chili flakes if you like it spicy!
